Recipe: Protein-Packed Banana Bread in a Mug

With 33 grams of protein and a healthy dose of energizing carbs, this easy banana bread in a mug recipe is the perfect pre-workout or post-workout snack.

Let us introduce you to our Protein-Packed Banana Bread in a Mug, which comes together in minutes and is nutrient-dense while still tasting oh-so-sweet. While traditional banana bread recipes rely on flour, butter and sugar, this macro-friendly version uses Kodiak Buttermilk Power Cakes Flapjack and Waffle Mix as a base. This contains 100% whole grain wheat flour and includes whey protein concentrate. 

The extra scoop of protein powder allows you to bring in your favorite protein supplement (we recommend vanilla flavor, but a chocolate banana bread in a mug also sounds yummy, now that we think about it!) After microwaving, top with sliced bananas, walnuts (if desired) and maple syrup.

Protein-Packed Banana Bread in a Mug

Makes 1 serving

Ingredients

  • 1 medium banana
  • 1/4 cup Kodiak Buttermilk Power Cakes
  • 1 scoop vanilla protein powder
  • 1 tbsp walnuts, crushed
  • 2 tbsp maple syrup

Directions

  1. Spray a microwave-safe mug or ramekin with cooking spray and set aside.
  2. In a separate bowl, mash the banana before adding the remaining ingredients. Stir well until you have a smooth batter. 
  3. Pour the batter into the mug and microwave for 75-90 seconds, or until the center is no longer runny. Watch for overflow, and you may have to finish the cooking time in 5-second intervals. 
  4. Optional: top with additional banana slices, walnuts and syrup.
