Birthday Cake Protein Bites

Looking for a healthy dessert that won’t throw off your meal plan? These birthday cake protein bites are packed with protein and other healthy ingredients like nut butter and oats. They’re natually sweetened with honey and maple syrup, and super easy to make, too. We love them as a pre or post-workout snack!

Ingredients

cup oat flour

1/2

cup almond flour

1

scoop vanilla protein powder

1/4

cup cashew or almond butter

T honey or maple syrup

1/2

t vanilla extract

1/2

t almond extract

T coconut oil (melted)

3-4

T sprinkles

pinch of salt (omit if your nut butter contains salt)

Steps

  1. In a large mixing bowl, stir together the nut butter, honey, vanilla extract, almond extract and coconut oil until well combined.
  2. Add the oat flour, almond flour, protein powder and pinch of salt (if your nut butter is unsalted). Stir until well-combined.
  3. Using a heaping teaspoon, form about 16 small balls.
  4. Put the rainbow sprinkles onto a small plate and roll each ball in the sprinkles to coat.
  5. Chill and store in the fridge or freezer (depending on your texture preferences).

One protein bite contains approximately 68 calories, 4 grams of fat, 6 grams of carbs and 3 grams of protein.
