This refreshing salad requires only five ingredients and tastes amazing. The fresh lime juice prevents the avocado from turning brown and the citrus combines perfectly with the sweet watermelon, so it’s a beautiful and tasty side salad to please all ages of friends and family.

Not only does it taste good, but it’s good for you! Avocado is a nutrient all-star, containing 20 vitamins and minerals. They are low in sugar and contain fiber, which helps you feel full longer. Some people avoid avocado because the word “fat” scares them. Don’t shy away from this superfood! The fat in avocados is monounsaturated fat, which is a “good” fat that lowers bad cholesterol. But as with any food, eat in moderation and enjoy the health benefits.

Watermelon, Avocado and Lime Salad

Ingredients

avocados, pitted and cubed

1

seedless watermelon, cubed

T fresh lime juice

1/3

cup fresh chopped cilantro

pinch of salt, to taste

Steps

  1. In a large bowl, lightly combine the avocados and lime juice. (You don’t want to mash up the avocado.)
  2. Add watermelon cubes.
  3. Sprinkle with cilantro.
  4. Add salt to taste.
