Recipe: Double Chocolate Chunk Protein Bites

Chocolate lovers, rejoice! These protein bites are a tasty, indulgent treat that still packs protein and keeps the sugar count to a minimum. They’re gluten-free and come together in just a few minutes, so what are you waiting for?

Ingredients

1/4

cup nut butter

2

T honey or maple syrup

1

tsp vanilla extract

1/2

cup oat flour (or pulverized oats)

1/2

cup almond flour

1

scoop vanilla protein powder

2

T cocoa powder

pinch of salt (omit if your nut butter contains salt)

¼ cup (about ½ a bar) dark or milk chocolate bar of your choice, chopped into small chunks

Steps

  1. In a large mixing bowl, stir together the nut butter, honey or maple syrup, vanilla extract and coconut oil until well combined.
  2. Add the oat flour, almond flour, protein powder, cocoa powder and pinch of salt (if your nut butter is unsalted). Stir until well-combined.
  3. Mix in the chocolate chunks.
  4. Using a heaping teaspoon, measure and form small balls.
  5. Chill and store in the fridge or freezer (depending on your texture preferences!).

Note: The dough texture can vary based on the type of nut butter you use and the starting state (liquid or solid) of your coconut oil. If the dough is too soft to handle when it’s time to roll, try chilling it in the fridge for a short time before you form the bites or adding more almond flour to the mixture. If it’s too hard or crumbly, it might need some time to sit at room temperature to soften slightly.

 

Makes about 16 bites. One bite contains approximately 120 calories, 8.3g fat, 9.4g carbs and 4.1g protein.
